Peanut Butter Chocolate Chip Muffins & Coffee Gift Basket

Coffee is my love language. There are few things better in this whole wide world to me than a good, hot cup of coffee. I seriously go to bed every night dreaming of the next morning because... COFFEE. And homemade Peanut Butter Chocolate Chip Muffins alongside my delicious cup of coffee and I'm in heaven. I know many of you would be too! 

Here's the recipe for these absolutely delicious little muffins. They are sweet enough for an afternoon treat with a cup of coffee, but not too sweet so they can still be for breakfast with a cup of coffee. See a trend here... with a cup of coffee! 

Peanut Butter Chocolate Chip Muffins

2 cups cake flour
1 tsp baking powder
1/2 tsp salt
2 eggs
1/2 cup 1% milk 
1 stick butter, room temp
1/2 cup creamy peanut butter
1/2 cup packed light brown sugar
1/2 cup white sugar
1 tsp vanilla extract
1/2 cup peanut butter chips
1/2 cup milk chocolate chips 

In a large bowl, combine flour, baking powder and salt. Set aside. In a bowl mixer combine butter, peanut butter and sugars until well combined. Add in eggs until blended. Slowly add in milk and vanilla extract until combined. Fold in peanut butter chips and chocolate chips. Fill pre-lined muffin tins 2/3 full and bake at 350 degrees until lightly browned and set in the middle, about 20 minutes.  This recipe makes A LOT of muffins- 15 full size muffins and 24 mini muffins (bake for 7-8 minutes). Store at room temperature for up to 3 days... but they won't last that long!

#1 Dad Father's Day Gift Idea: HOW TO style a themed gift display!!

Father's Day is coming up soon, so it's time to start thinking of something fun that the Dads in your life will love! Every year I come up with a creative theme to decorate our sun room for Father's Day, and this year it's #1 DAD. It's super fun and EASY to come up with a theme for Father's Day and I'm going to show you how today! 

There are FOUR basic things I do EVERY time when styling my hutch (or any bookshelf or display table) for an occasion:

1) Choose a theme

Whenever my hutch decorations are centered around a holiday or someone's birthday, I usually style the decorations based on the gift that I buy. For Father's Day this year, I found this Armor All Car Care Gift Pack for my husband. 2) Choose or make some printable items to tie everything together.

For this display I just found some FREE race car printables on Pinterest. They're from Creative Little Stars, and she has THE cutest shop full of printables! 

3) Stick with basic colors and buy/make easy desserts matching your colors.

It's easier than you may think to set up a fun theme gift and display for Father's Day (or ANY occasion really!) I am ALWAYS switching out my white hutch decorations for parties and holidays. I rarely spend any money doing it too because I just look around our home for things that work into the decor. I stuck with black, white, and red for my color scheme for this Father's Day set up so I just used white cake plates and platters, red boxes and buckets, and I found simple, delicious, ready to go treats from the bakery at Walmart to finish off the display (mini red hot cookies and mini chocolate donuts). I dipped the strawberries in chocolate and drizzled with white chocolate to carry out the black and white theme. 

4) Add a special, memorable touch!

To personalize the whole display, I pulled out some sweet pictures of my husband with the boys and I. He's such an awesome, loving Dad. The boys and I adore him. He works so hard for our family and comes home every night and helps me with our boys. He is my #1 supporter and he believes in me even when I doubt myself. I'm so grateful for this man. He is definitely our #1 DAD and we wish him and all dads a HAPPY FATHER'S DAY!

Homemade Bath Salts & Best Mom's Day Ever One Stop Shop!

I love this time of year because our family has so many fun things going on.  Tucked in between THREE birthdays in my immediate family of six is Mother's Day.  And because my head is usually going in ten different directions even without all of the birthdays happening here, I love being able to shop quickly, conveniently, and at the same time come up with something sweet and homemade like my Homemade Bath Salts made with essential oils.  This year at Walmart, you can do just that (or skip the homemade part if that's not your thing) with American Greetings "One Stop Shop" for the Best Mom's Day Ever!

These Homemade Bath Salts with Essential Oils are so affordable and simple to make, and they smell amazing.  Being a mom can be a stressful job- these Homemade Bath Salts with Essential Oils are the perfect gift to help Mom unwind after a long, busy day. Here is the super simple recipe for you: 

Homemade Bath Salts with Essential Oils
16 ounces Epson Salt
20 drops Essential Oils, your choice of scents 
(I made 3 different jars of Bath Salts so I used Orange, Lavender, and Lime)  
Mason Jars, or other glass jars with lids

Simply pour Epson Salt in the jar, filling about 1/3 way full, then add a few drops of essential oil (about 6-8 drops) and gently shake to combine.  Repeat with adding salt then drops of oil and shaking until full.  I like my bath salts to be highly fragrant, but if you like a milder scent, just add fewer drops.  Tighten the lid, add a cute ribbon and a handwritten tag and you've just made an adorable easy Mother's Day gift!  

I put this Homemade Orange Scented Bath Salts in a wide mouth Mason jar, then placed it inside a cute little cardboard circle container that I found in the American Greeting's "One Stop Shop" for Best Mom's Day Ever at Walmart.  It was under $2 for the cute floral container and it is the PERFECT size for a wide mouth Mason jar- yay!

 Of course you can also pick up the perfect Mother's Day card at American Greetings "One Stop Shop" for the Best Mom's Day Ever at Walmart too.  It's an absolutely adorable display of American Greetings Mother's Day cards along with a specially chosen selection of gifts to choose from for the special mom in your life. I love anything with pennants or banners, and this card had the perfect message.  It also happened to be the very first card I picked up.  How often does that happen?!  Almost never for me, but I loved it.  

My mom is a selfless, loving, devoted mom and wife who raised 4 successful children, and she is now a proud grandmother of 13 grandchildren.  She deserves to feel loved and appreciated every single day of the year.  I hope my sweet little gift from American Greeting's "One Stop Shop" at Walmart helps her feel extra loved on Mother's Day.  With a little help from American Greetings, the special mom in your life can have the Best Moms Day Eve too! Holiday Nut Crunch Cracker Toffee

I love baking and delivering homemade gifts to our neighbors at the holidays.  It's been one of my favorite Christmas traditions since I was a little girl.  And crazy as it sounds, I actually live in the exact same house that I grew up in and since it's such a great little neighborhood some of our neighbors are the same neighbors that lived here when I was little!  Every year since I can remember, one particular neighbor has brought us a beautiful plate of traditional German baked Christmas goodies.  This neighbor also happens to be a total health nut, so every time I try to reciprocate I try my hardest to bring them something that isn't packed full of sugar.  Last year I wracked my brain, but ended up giving them a bag of oranges I picked from our tree for Christmas because everything I was baking was definitely packed full of sugar.  So this year I'm totally patting myself on the back because I came up with the PERFECT "baked" gift for them.  It's not too sugary, it actually contains better-for-you ingredients items, it looks festive, and it was easy to make with the help of Planter's Holiday Nut Crunch.  

It's a really delicious sweet and salty crunchy dessert that isn't overly sweet.  And the best part is that it looks festive, but you'll only spend about 10 minutes in the kitchen making it!

Holiday Nut Crunch Cracker Toffee
8 full-size graham crackers
3/4 cup semi-sweet chocolate chips
3/4 Planter's Holiday Nut Crunch

The Planter's Holiday Nut Crunch Mix is a perfect combination of sweet and salty with peanuts, raisins, chocolate candies, chocolate covered peanuts, almonds, cashews, and cranberries.

To make your "toffee" simply lay the graham crackers out on a parchment paper-lined cookie sheet so that all of the crackers are touching each other (like a big rectangle).  Melt your chocolate chips, then use a rubber spatula to spread the chocolate over the graham crackers.  Sprinkle Planter's Holiday Nut Crunch over the top of the chocolate, then refrigerate for about 20 minutes until the chocolate hardens.  

Break into pieces and enjoy.

I put mine on a red plate, then just tied it up with cellophane and a festive bow and it's ready to be delivered!

Host Your Best Ever Graham Cracker House Decorating Party!

I have always loved Christmas since I was a little girl.  But there is definitely something amazing about being able to celebrate Christmas with our little boys.  Seeing Christmas through their eyes is magical to me.  I want to soak up every minute of them enjoying the festivities of the season while they're young enough to enjoy the magic of it.  This past weekend the boys had a small group of friends over for a fun little Christmas party.  And just look at how excited our littlest guy was!  I wish I would've captured his excitement on video because it truly was the cutest thing to see his eyes light up as he looked around and saw all of the fun things I had prepped for making Graham Cracker Houses while he was sleeping the night before.

The kids all loved being able to just run around and play together, while the moms and I were able to actually sit down and catch up.  The only planned activity for them was decorating these cute graham cracker houses, made with my favorite kind of graham crackers- Honey Maid!

Decorating little houses is definitely one of our favorite things that we do every year together, so having friends over to decorate graham cracker houses with us was definitely an extra fun treat!  I love making these houses because Honey Maid graham crackers taste great, the crackers are always straight (unlike other brands, and that is super important when putting these houses together!) and they are affordable and easy to make, unlike homemade gingerbread houses that take forever to prep, or store-bought houses that would be too expensive to buy to host a party like this.

It definitely makes a graham cracker house decorating party more fun to have everything really organized for the kids ahead of time so no one is having to ask for things to be passed across the table, and we definitely don't want shared, licked knives right?  That's why I always prep the houses the night before.  Each kid has their own house pre-assembled on a paper plate using six full graham crackers.I also buy disposable paper cups so that every kid gets their own cup of homemade buttercream frosting and their own knife.  It's such a great way to help a graham cracker house party go smoothly and with a lot less mess than a shared tub of frosting.

I always set up paper cups filled with candy for decorating ahead of time so that all of the kids can easily get to the candy- no bags being spilled, no reaching across the table, etc.  For 8 kids I had 3 big platters across the middle of the table so everyone had easy access to the candy for decorating.

And the kids all loved their decorated houses.  They came out so cute.

Honey Maid Graham Crackers clearly make awesome little Christmas houses!  But they are also amazing when used crushed in recipes.  I made these festive Chocolate Peanut Butter Truffles using Honey Maid Graham Crackers.  

I love these truffles because they taste AMAZING and look like they took forever, but they are actually quite easy to make.   Here's what you need:

1 sleeve Honey Maid graham crackers
1/2 cup creamy peanut butter
1 cup powdered sugar
6 tablespoons salted butter, melted
1/3 cup brown sugar
2 cups mini chocolate chips, melted
sprinkles, optional

Crush the graham crackers in a stand mixer (or in a large Ziploc bag with a rolling pin if you don't have a stand mixer), then add in your powdered sugar, brown sugar, butter, and peanut butter.  Mix until well combined.  It will look like coarse crumbs.

Roll the graham cracker mixture into one-inch balls and place on a parchment lined cookie sheet.

Melt the chocolate chips in the microwave on medium power, stopping to stir and making sure not to overheat it.  Dip each ball in the chocolate to coat, then shake off the excess chocolate on the side of the bowl before GENTLY placing the ball back on the parchment lined cookie sheet.  Garnish with sprinkles (optional).  Refrigerate for 30 minutes, or until chilled.  

I love to package up my Chocolate Peanut Butter Truffles to give as gifts to our neighbors and friends at Christmas time.
