Pumpkin Cupcakes with Salted Caramel Buttercream

Sounds delish, right?  Ohhh, they are. 
  

I pinned this recipe onto my Fall in love with Autumn board in Pinterest a couple of weeks ago, and couldn't stop thinking about these gorgeous cupcakes...

Plus I go weak in the knees for anything that has "salted" and "caramel" in the same sentence.  Add in the word "buttercream" and you've pretty much given me a little slice of heaven.  

I made these for my Scentsy Open House on Saturday, and they were a hit.  Plus, since they have pumpkin in them, it makes it not only acceptable, but encouraged to eat them for breakfast too :)

I would've followed the recipe exactly, but since I wasn't able to find just canned pumpkin, I had to use canned Pumpkin Pie mix, which is basically canned pumpkin with all the yummy fall spices already added in.  So, here's my adapted recipe...

Pumpkin Pie Cupcakes

2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon sea salt
1 can (15 oz) Libby's Easy Pumpkin Pie Mix
1 cup sugar
1 cup packed light brown sugar
1 cup (2 sticks) unsalted butter, melted and cooled
4 large eggs

Preheat oven to 350 degrees.  Line cupcake pans with paper lines; set aside.  In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt; set aside.

In the bowl of a stand mixer, combine the brown sugar, sugar, butter, and eggs.  Beat on medium speed until well combined.  Add dry ingredients, and mix on low until smooth.  Fold in the pumpkin puree.

Divide batter evenly among liners, filling each about halfway.  Bake until tops string back when touched, about 17 minutes, rotating pans once if needed.  Transfer to wire rack to cool completely.  Recipe I followed said it makes 18 cupcakes... Mine were just the right size and I got 27!  Recipe also said to bake for 20-25 minutes, but at 17 I smelled something burning and pulled them right out.  One cupcake in the back had a black bottom, but the rest were just fine... I didn't rotate the pan.

Salted Caramel Buttercream

I just added an extra teaspoon of vanilla extract, and 1/2 cup powdered sugar... here's the recipe with my little changes {because I was serving them to adults and kiddos, thought it might be a bit too salty for the littles}.

1/4 cup white sugar
2 tablespoons water
1/4 cup heavy cream
2 teaspoons vanilla extract
2 sticks butter, 1 salted & 1 unsalted
2 1/2 cups powdered sugar 
1/2 teaspoon sea salt

In a small saucepan, bring the white sugar and water to a boil over medium heat.  Without stirring, let it boil until it reaches a deep amber color.  Remove from heat and stir in vanilla & heavy cream.  Stir until smooth.  Let cool until easy to pour, but not hot {I put mine in the fridge for about 10 minutes}.  Meanwhile, beat the butter and sea salt in a stand mixer until lightened and fluffy.  Slowly add in the powdered sugar, scraping down the bowl and mixing until combined.  Turn off the mixer and slowly pour in the caramel mixture.  Mix on low until combined, t hen mix on medium-high for about 2 minutes, until fluffy and well combined.  If you pour your caramel in while it's still too warm, your frosting will be runny.  If that happens, refrigerate until firm enough to pipe on your cupcakes.

Made exactly the right amount {plus two small spoonfuls for my helpers} to pipe onto 24 cupcakes.

3 things on my mind, plus a recipe...

I haven't posted in a whole week... 
where is the time going?!


We've been enjoying leisurely summer days for so long, and now all of a sudden, my boys start school in two weeks.  


Two different schools- both brand new for them.  
Akkk!!!  
Thankfully they don't seem to be nearly as nervous as I am :)  


So, to play a little catch up, 
here's what is on my mind...


1st: 
Today I went to the school office for my soon to be 1st grader to plead my case on why he MUST have the nicest 1st grade teacher there... nothing like being a pushy new mom, right?!  I can't help it.  He's a precious, sweet boy who has been in a little bubble so far in his education {and his whole life really}, and I am not ready for some meanie teacher to pop that bubble!


The secretary in the office looked SO familiar to me, and when she said, "You look so familiar to me..." I knew everything would be fine.  It turns out that we went to high school together!  I guess this really is a small town still.  And after talking to her,  I feel assured that he will be placed in the right classroom.  Don't let me down please, sweet Christina from high school... or I'll march in there again and I really don't want to be THAT mom :)


2nd:  
Natalie at A Turtle's Life for Me is precious to me too!  I mean, she's not my first born child, but I would march down to any school office for her too if needed :)  And I haven't even met her in real life!  I hopped on the computer today and saw THE SWEETEST post by Natalie, and it was all about me.  I seriously cried happy tears to think that she took all that time, effort, and thought to write a post about me.  Thank you Natalie!  And welcome to those of you who are new here at Gallamore West, and on Facebook, and on Pinterest thanks to Natalie's post.  I'm so glad you're here!
Isn't Natalie just the sweetest girl ever?!







3rd:
  I signed up to be a Scentsy consultant yesterday and I'm thrilled about it.  Nooooo, don't leave!!  I know that not everyone is into "selling" stuff, or in this case being sold something.  I totally get it because I'm not really into all that either.  So I promise you that Gallamore West will not turn into my platform to urge you to buy Scentsy products.  I do however think it's the greatest thing since sliced bread.  Actually, bread's not even this good... I think it's the greatest thing since cheesecake.  Now, that's good! :)   It's a product that I love and tell everyone about, so it seems a natural fit to sell it myself!


I love writing on my little blog here, so Gallamore West will still be about all the same stuff I've been writing about... 


every day joys 
 creating and crafting 
silly kiddos

traditions with our boys
and all that fun stuff.

 And when I made {and LOVED} this Peanut Butter Cake last week that Natalie just happened to make too on the same weekend... I decided that I'd like to try a new recipe from Pinterest once a week or so, and bake it on Monday nights.  


Why Monday?  


So I can send some of the yumminess to work with the hubs, and also to school with the boys {my Pre-K boy is going 2 days a week only}.  This week I tried this recipe for Buttermilk Blueberry Breakfast Cake.   Seriously, any excuse to eat cake for breakfast is a winner in my book... it was delicious.  And oops, I didn't send a single piece out of the house!

Buttermilk Blueberry Breakfast Cake

{I didn't have any lemons so I skipped the lemon zest, 
and mine needed to cook for about 47 minutes}.



Serves 6-8
½ cup unsalted butter, room temperature
2 tsp. lemon zest or more — zest from 1 large lemon
7/8 cup + 1 T. sugar
1 egg, room temperature
1 tsp. vanilla
2 cups flour
2 tsp. baking powder
1 tsp. kosher salt
2 cups fresh blueberries
½ cup buttermilk
1. Preheat the oven to 350ºF. Cream butter with lemon zest and 7/8 cup of the sugar until light and fluffy.
2. Add the egg and vanilla and beat until combined. Meanwhile, toss the blueberries with ¼ cup of flour, then whisk together the remaining flour, baking powder and salt.
3. Add the flour mixture to the batter a little at a time, alternating with the buttermilk. Fold in the blueberries.
4. Grease a 9-inch square baking pan (or something similar) with butter or coat with non-stick spray. Spread batter into pan. Sprinkle batter with remaining tablespoon of sugar. Bake for 35 minutes. (Note: Some of you have found this cake needs much more time in the oven, so don’t be afraid to cook it for 10 minutes longer, if need be. Just check with a toothpick every 5 minutes or so.) Check with a toothpick for doneness. If necessary, return pan to oven for a couple of more minutes. Let cool at least 10 minutes before serving.
