Chewy Chocolate Chip Cookie Bars are always on top of my list when I'm looking for a delicious, easy to make dessert that uses ingredients that I generally have on hand. We quickly whipped up a batch of them today because why not bake them on any old Tuesday, especially during a San Diego heat wave, so I'm sharing the recipe with you.
Chewy Chocolate Chip Cookie Bars
2 1/2 cups all-purpose flour
1/2 cup white sugar
1 cup packed light brown sugar
1 cup unsalted butter, softened
1 teaspoon salt
1 teaspoon baking soda
1 1/2 teaspoon vanilla extract
2 cups semi-sweet chocolate chips
Preheat oven to 350 degrees and lightly grease a 9 x 13 glass pan. Cream butter with sugars in stand mixer until light and fluffy. Add in eggs and vanilla extract, one at a time, mixing throughly until well combined. Add in salt and baking soda, then slowly add in flour until combined. Fold in chocolate chips.
Spread evenly with rubber spatula into lightly greased 9x13 glass dish.
Bake at 350 degrees until golden brown on top, about 25 minutes. Enjoy!
