Oven Baked Sun-Dried Tomato and Fresh Mozzarella Three Cheese Tortellini #JoyToTheTable

This is a fabulous, easy to put together holiday meal that our family loves.  And it's an added bonus that it just happens to look like it took a huge amount of time and effort, but in reality it comes together beautifully in less than 30 minutes!

It all starts with Barilla Three Cheese Tortellini and Barilla Tomato and Basil Sauce, both found in the pasta aisle at my neighborhood Vons store.  Right now all Safeway Stores {Vons is part of the Safeway family} have an in-store promotion of $.75 off one bag of Barilla Tortellini.  So, run to the grocery store, pick up these items and let's get cooking!

First, just boil the Barilla Tortellini for 10-11 minutes... 

add in some fresh ingredients like fresh mozzarella and shredded parmesan, 

along with fresh organic basil and sun-dried tomatoes,

top it with more cheese and bake it in a cute little Christmas dish so everyone gets their own individual dish of hot, bubbly, cheesy, delicious Baked Tortellini...

and you've got yourself a "fancy" Italian dinner in no time! 

Here's my recipe.  It's perfect for nights when you're entertaining because it tastes amazing, but doesn't require you to slave away in the kitchen.  My family loves it, and I hope yours does too! 

Oven Baked Sun-Dried Tomato and Fresh Mozzarella 
Three Cheese Tortellini
1 bag Barilla Three Cheese Tortellini
1 jar Barilla Tomato and Basil Sauce
5 oz. shredded parmesan cheese, divided
5 oz. fresh mozzarella cheese, divided
1/2 cup sun-dried tomatoes, chopped
fresh basil to garnish

Preheat oven to 350 degrees.  Boil Barilla Tortellini over medium heat for 10 minutes, until cooked al dente.  Drain and set aside.  Meanwhile, chop fresh mozzarella into small cubes and set aside.  Chop sun-dried tomatoes into small pieces and set aside.  In a large mixing bowl, combine the jar of Barilla sauce with 4 oz. of the parmesan cheese, 4 oz. of the chopped fresh mozzarella cheese and the sun-dried tomatoes.  Add in the sun-dried tomatoes and stir to combine.  Fold in the cooked Tortellini and gently toss to combine.  Pour into a glass baking dish, or into 6 individual baking dishes.  Top with remaining mozzarella and parmesan cheeses.  Bake at 350 degrees for 18-20 minutes, until hot all the way through and the cheese on top begins to bubble.  Garnish with fresh organic basil and enjoy!
