Chicken Pot Pie with Hash Brown Crust {Recipe} #OreIdaHashBrn #cbias

I'm always on the lookout for easy, healthy, and delicious 
dinners to feed our family.  With four little ones, it's 
sometimes hard to pack in the healthy stuff and still make 
something that they like and will actually eat.  So when I 
had the opportunity to come up with a dinner recipe using 
Ore Ida Shredded Hash Browns, I jumped at the opportunity!
And what better to make for dinner on these cold Fall nights 
than a homemade Chicken Pot Pie?


Here's how I made it:

First, I picked up a bag of Ore Ida shredded Hashbrowns while 
shopping at Walmart. 



They were easy to spot because they caught my boys eyes 
right away because of the cute snowman from Disney's Frozen 
movie right on the front of the bag.

Our boys sure are excited to see Disney's new movie, 
Frozen.  Here's one of them last week at Disneyland.  
They each got to choose a special something from the 
gift shop and our 6 year-old chose the reindeer from Frozen!

So, back to the recipe...

Here's what you'll need:
One bag frozen Ore Ida Shredded Hash Browns
3 cups cooked chicken, cubed
1 stick butter, divided into 4 equal parts
1 carrot, peeled and diced
1 celery stalk, diced
1/2 onion, diced
1 tsp garlic powder
1 tsp salt
1 tsp pepper
2 tablespoons flour
1 cup milk

Preheat oven to 375 degrees.
Melt 1/4 stick butter and toss with the hash browns, 
reserving 1 cup of hash browns for later.
Press buttered hash browns into 9 x 13 glass baking dish.
Bake at 375 for 20 minutes, or until lightly browned.


While baking, chop your vegetables.  Cook chopped 
vegetables in 1/4 stick butter on medium heat until onions 
are translucent.  Combine chicken and cooked vegetables 
together in medium bowl.  I like using a rotisserie chicken 
because it's quicker and easier than cooking the chicken 
myself, and because it adds great flavor to the dish.


Stir in salt, pepper, and garlic powder.
Melt 1/4 stick butter with flour over medium heat.  
Allow it to bubble and boil for 2 minutes.  


SLOWLY stir in 1 cup milk.
Add milk mixture to chicken and vegetables.
Pour chicken mixture over browned hash brown crust.
Toss reserved hash browns with the remaining 1/4 stick 
butter.  Evenly spread the hash browns over the chicken layer.
Cook for 10 minutes until hash browns are starting to cook, 
then broil for a couple of minutes to lightly brown the top.

I made this for tonight and it was so tasty! My boys had 3 helpings so the only bad thing is that there are no leftovers! Thanks for sharing the recipe, Laurie :-)
