Chocolate Chip Pumpkin Bars

I love baking, especially with pumpkin in the Fall because it makes everything so flavorful and never dry.  These Chocolate Chip Pumpkin Bars I made yesterday are SO good.


I need to hurry and package some up to give away before I eat them all!  Unless you're my neighbor who will be getting some of my bars, gather up your ingredients...

Here's the recipe so you can make them too!

Chocolate Chip Pumpkin Bars
2 cups flour
1 cup granulated sugar
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons pure vanilla extract
1 large egg, room temperature
2 sticks of butter, room temperature
1 cup canned pure pumpkin, not the kid pre-mixed with spices for pumpkin pie
2 cups semisweet chocolate chips

Grease 9x13 pan with nonstick cooking spray and set aside.  Preheat oven to 350 degrees.  In mixer, combine butter and sugar.  Cream well, about 4-5 minutes, until light and fluffy.  Add in egg and vanilla until well mixed.  In a separate bowl, combine all dry ingredients and set aside.  Mix pumpkin into butter/sugar mixture and combine thoroughly.  Add in dry ingredients and mix just until blended (do not over mix or your bars will be too heavy and dense).  Fold in chocolate chips.  Bake 33-35 minutes, until very lightly browned on top and a toothpick inserted into the middle comes out almost clean.  Cool on wire rack, cut into bars, and enjoy!
