Easy Un-Fried Chicken

Looking for a quick and easy chicken dinner that kids and adults will love?  My boys and husband have been going crazy over this chicken recipe lately.  

It comes together really quickly and it's baked in the oven {not fried} so it's actually not horribly unhealthy either.  The second time I made it I used gluten-free flour and no one even noticed the difference.  We brought this camping a couple of weeks ago... yum!

Easy Un-Fried Chicken
4 boneless skinless chicken breasts, cut into strips (I use Costco frozen chicken)
4 cups Corn Flakes
1/2 cup all purpose flour, or 1/2 cup gluten-free flour for a gluten-free version (I use Trader Joe's brand)
1/2 teaspoon paprika
1/2 teaspoon garlic powder
salt and pepper to taste
2 eggs
1 tbsp water
4 tbsp melted butter or olive oil 

Preheat oven to 375 degrees and prepare a cookie sheet by covering with aluminum foil and lightly spraying with nonstick spray.  Crush cereal into fine crumbs (I just put mine in a gallon-sized Ziploc bag and use a rolling pin to crush it).  Add all of the other dry ingredients to the Ziploc bag, seal it, and shake until combined.  Combine eggs and water in a shallow dish, big enough to dip your chicken strips in.  Using tongs to hold the chicken so you don't have to touch it, coat each piece of chicken in egg mixture, then put it in the Ziploc bag, seal it (don't forget that part!) and shake it to coat.  Do this one piece at a time, laying each piece on the cookie sheet after coating it.  Make sure the chicken strips are not touching each other so they cook evenly.  Drizzle with melted butter or olive oil, if you want to.  But really, who doesn't want to? :)  Bake at 375 for 20 minutes, or until juices run clear when you cut it.  Serve with your favorite dipping sauce.  My guys loved the ranch dip I made to go with it.  Enjoy!

Your chicken looks great and I love that it's baked!!!!! I LOVE fried chicken, but always feel so guilty eating a lot of it!!! This is a great alternative!!!!
